Here are 3 of our favorite and super easy chicken pasta recipes using delicious <a href="https://www.goodranchers.com/">Good Ranchers</a> chicken:

Easy Lemon Chicken and Pasta

Ingredients:

1lb penne pasta

2 pieces of Good Ranchers chicken

Salt and pepper to taste

3 garlic cloves minced or sliced

3tbsp olive oil

2 lemon wedges (or use the Good Ranchers lemon chicken!)

1/2 cup of grated Parmesan Cheese

Directions:

Cook pasta according to package.

Season chicken with salt and pepper. Grill or pan sear chicken until golden and completely cooked. Let cool completely and transfer to a cutting board, cutting chicken into strips.

Add oil and garlic to sauté pan for about 2-3 minutes.

Transfer warm pasta, fully cooked chicken and garlic into one large pot, sprinkle lemon over the mixture and mix until fully combined. One Pot Creamy Mushroom Chicken Pasta

Ingredients:

4 chicken breasts

Salt and pepper for seasoning

1 tbsp olive oil, ivided

4 garlic cloves garlic, minced

1/3 cup  chicken stock/broth

8 ounces brown or Cremini mushrooms, sliced

1 quart chicken broth, (or stock)

12 ounce (375 ml) can evaporated milk*

1/3 cup milk

10 ounces uncooked penne pasta (just over 4 cups)

1 cup Parmesan cheese

Chopped parsley, for garnish (optional)

Directions:

Season chicken with salt and pepper or use Good Ranchers pre-seasoned chicken for an easier dinner option. Then heat 2 teaspoons of oil in a large saucepan over medium heat. Add chicken and sear equally on both sides until golden brown, cooked all the way through and remove and set aside.

Add remaining oil to the pan and sauté the garlic, then pour in the chicken stock and simmer for about 5 minutes.

Add the mushrooms and cook 2-3 minutes, stirring occasionally. Then, add the remaining broth, condensed milk, salt and pepper, and bring to gentle simmer. Add pasta and simmer until pasta is al dente, about 15 minutes, still stirring occasionally.

Stir in the Parmesan until creamy, then remove from heat and allow to sit for 5 minutes as sauce thickens. Slice the chicken into strips and mix into the pasta.

Garnish with parsley and extra Parmesan, and serve warm.

BBQ Ranch Chicken Casserole

Ingredients:

3 Good Ranchers chicken breasts or about 1 lb of chicken

1 lb dry pasta

1 cup can sweet corn

3 fresh Roma tomatoes chopped

1 1/2 cup shredded Mexican or Monterrey Jack cheese

1 cup shredded Monterrey Jack cheese for topping (or any preferred shredded cheese)

Salt and pepper to taste

1 1/4 cups ranch dressing (fat free or low fat is fine)

3/4 cup of your favorite BBQ sauce

Directions:

Cook pasta per package instructions until almost done, but careful not to overcook.

Grill chicken until completely done, then chop or shred into small pieces, set aside.

Preheat oven to 350 and lightly grease a 9x13 casserole dish.

In a large mixing bowl, combine diced tomatoes, corn, cooked pasta and chopped Good Ranchers chicken. Add a little salt and pepper and mix well.

Add BBQ sauce and ranch to the bowl and combine until evenly distributed.

Add 1 1/2 cups of cheese and mix until completely blended.

Transfer entire mixture to the casserole dish and spread it evenly. Sprinkle remaining cheese over the dish and bake for 15-20 minutes.

This is also an easy chicken and pasta casserole you can make ahead of time and freeze. Just let thaw completely and cook for 20 minutes and serve.

Summer Grilling Tips Everyone Should Know

It’s no secret chicken is one of the most popular dinner options. Not only are there a ton of ways to cook chicken, there are so many sides that pair perfectly with chicken. <h5>Pan Sautéed Zucchini</h5>
INGREDIENTS

1 tbsp extra-virgin olive oil

2 garlic cloves, minced

3 zucchini, sliced

1/2 tsp dried oregano

Salt and Pepper to taste and crushed red pepper flakes

1/4 cup freshly grated Parmesan Cheese

DIRECTIONS

In a large skillet, heat oil over medium to high heat. Add garlic and sauté for about 30 seconds. Add zucchini and oregano. Cook until zucchini is tender, about 8-10 minutes. Gently season with salt, pepper, and a pinch red pepper flakes. Top with Parmesan and serve warm next to your Good Ranchers chicken.

INGREDIENTS

3 lb. potatoes (about 4 large, combo of russets and Yukon Golds – you can peel or not peel, up to personal preference)

Kosher salt and Freshly ground pepper, to taste

1 stick butter

1/2 cup milk

1/2 cup sour cream (or low fat sour cream)

DIRECTIONS
<ol>
 	<li>In a large pot, cover potatoes with water and add pinch of salt. Bring to a boil and cook until soft, usually about 15 to 17 minutes. Drain and return potatoes to pot.</li>
 	<li>Use a potato masher to mash potatoes until smooth, no longer clumpy, unless preferred.</li>
 	<li>Melt butter and milk until warm in a small saucepan.</li>
 	<li>Pour over warm milk-butter mixture and stir until completely combined and creamy, then add sour cream, stirring until combined.</li>
 	<li>Season with salt and pepper, serve warm with extra butter on top (or leave on the side so each person can add as much or as little as they’d like). Cut up chives or shredded cheese also makes for another easy garnish.</li>
</ol>
<h5>Fully Loaded Cauliflower </h5>
INGREDIENTS

1  head cauliflower, cut into florets

6 bacon slices

1/2 cup sour cream

1/4 cup mayonnaise or Miracle Whip

1 tbsp lemon juice

1/2 tsp garlic powder

Kosher salt

Freshly ground black pepper

1 1/2 cup shredded cheddar

Optional: 1/4 cup chopped chives

DIRECTIONS
<ol>
 	<li>In a large skillet, bring ¼ cup of water to boil. Add cauliflower, then cover pan, and steam until tender, about 4 minutes. Drain in a colander and let cool.</li>
 	<li>In a large skillet over medium heat, cook bacon until crispy, then transfer to a paper towel-lined plate to drain. Chop bacon.</li>
 	<li>In a large bowl, whisk sour cream, mayonnaise, lemon juice, and garlic powder, then add cauliflower and toss gently. Season with salt and pepper, then using a spatula, fold in bacon, cheddar, and chives. Serve warm or at room temperature. You can also add onions.</li>

1/2 cup mayonnaise or Miracle Whip

1 tbsp lemon juice

 DIRECTIONS
<ol>
 	<li>Heat grill to high. Toss sweet potatoes, oil, and cumin in a large bowl and season with salt and pepper.</li>
 	<li>Grill sweet potatoes usually about 12 – 15 minutes, turning occasionally. You can also tell they are done when you can easily insert a fork into the center of the potato wedge.</li>
 	<li>In a bowl, stir mayonnaise and lemon juice and season with salt and pepper.</li>

4 Easy Side Dishes For Chicken

<h5>Tips For Cleaning Your Grill</h5>
Just like every grill is a bit different and every grill master has their own secrets, keep in mind the cleaning up part is different for every grill and type of meat too. For a gas grill, make sure you empty the drip pan every time, and for those charcoal grills, you’ll want to brush out the ashes to prevent buildup, gunk or any other issues, which could be hazardous and/or ruin your grill.

One other important note is to wait until the grill is completely cooled down before doing any clean up, other than using your stiff wire brush (as mentioned above).

After you’ve already enjoyed your steak dinner or <a href="https://www.goodranchers.com/good-ranchers-now-serving-up-american-kobe-beef/">American Kobe Beef</a> Burger lunch, go back and turn the grill on high. After it heats up, scrape the remaining food particles off. It’s much easier to get them off while it’s hot. Then, mop up the grates using a paper towel with canola oil to remove any excess food, debris, or build up. Another tip for your grill if you aren’t diligent about cleaning the grill after each use is to turn it on high before you grill, and use an onion to clean off the grates, which also adds a little extra flavor.

Having a grate grill scraper, wood scraper, and stiff bristle brush (we like nylon bristle brushes) are all handy tools you need to help clean your grill and do it regularly. Also, investing in a grill cover is a good idea.

Summer Grilling: Everything You Need To Grill In Style

If you’ve ever tried preparing ribs at home, you know it can require quite a few steps, a pretty hefty cleanup process, and a lot of questions like am I doing this right? So we wanted to share some of our best tips for cooking ribs, whether in the oven, on the grill or the smoker.For starters, be sure to get quality ribs that are easy to store in the freezer in case your plans change and you’re not ready to cook them immediately. At <a href="https://www.goodranchers.com/">Good Ranchers</a>, we promise quality meat each and every time, and we individually wrap our meat making it easier than ever to freeze it until you’re ready to start dinner.We suggest using baby back ribs, which are smaller and meatier chunks of meat, and usually the most common ones for cooking at home.<img class="img-fluid alignnone wp-image-175 size-large" src="https://cdn11.bigcommerce.com/s-e10kokolz/product_images/uploaded_images/Pork_BabyBackRibs-1024x683.jpg" alt="" width="1024" height="683">Make sure you have the right tools for grilling ribs! This includes a grill, obviously. But also a basting brush to coat them in BBQ sauce or whatever sauce you prefer, grilling tools for maneuvering them on and off the grill like tongs, aluminum foil (for storing in the fridge for an hour to let the dry rub soak in, if you go this route, plus it’s easiest if you need to throw the ribs in the oven for a few more minutes), and a meat thermometer will come in handy too.Start your grilling session by first removing the thin membrane from the back of the ribs. Insert a knife into the membrane to pull it off of the rib meat, and discard.Adding a dry rub, spice, or seasoning and letting it set in the fridge is highly recommended, for almost any meat, and definitely pork baby back ribs. Do this and add a sauce/baste towards the end of cooking (see below), instead of one or the other, which adds another layer of flavor as well as helps to tenderize the meat. The longer you leave the rub/spice on the ribs, the better. An hour is usually enough to add a blast of flavor, but leaving it overnight is ideal.The best way to cook pork baby back ribs over the grill is to set them over indirect heat, so not right on top of the flames. Light one side of the grill, and place the ribs on the other side to get that perfect smoky flavor. Sure this takes a while longer, but it gives it a tender and perfectly juicy flavor that you can’t resist.Some people prefer layering the slabs of ribs on top of each other, then rotating every 10 minutes to help get a juicier and smokier flavor, but that takes a bit of time and patience. If you’ve never tried that method, we highly recommend it.Baste and add sauce towards the end of your grilling session, to avoid burning your tender meat. A good rule of thumb is to wait until the last 20-30 minutes of grilling to add. If you do choose the stacking method, you can lay them side-by-side after you coat them in your desired sauce.How To Know When Your Ribs Are DoneThis is always the tricky part, but your Good Ranchers team is here to help. When the meat starts to separate from the bone, check to see if they are done. You’ll notice that the meat draws back and when you can see about 3/4 an inch of the rib bone, they are close to done. You can also start to see the color change, and usually note that a mahogany color denotes they are done.Our favorite method to see if the ribs are done is picking them up with grilling tongs. If the ribs start to look flexible or bend towards the ground, that’s your cue they are ready to be pulled off the grill and put on the dinner table! You can also rely on a toothpick, pricked between two bones. If the toothpick goes through easily, you’re good to go.Like all grilled meat, we highly suggest waiting 10 minutes to let the meat rest and the juices redistribute before digging in.
