This Smothered Philly Cheese Brats recipe transforms classic brats into a gourmet feast with melted provolone, Parmigiano-Reggiano, and cheddar cheese sauce. Sautéed onions, green bell peppers, and mushrooms add a rich and savory depth, perfectly complementing the juicy Good Ranchers brats nestled in soft brioche buns. It's an indulgent twist on the traditional, promising a mouthwatering experience with every bite.

Ingredients

  • Good Ranchers Brats
  • Brioche Hot Dog Buns
  • 1 Large Yellow or White Onion, thinly sliced
  • 2 Green Bell Peppers, thinly sliced
  • 8 oz Mushrooms, sliced
  • 2 tbsp fresh Parsley, chopped
  • 3 tbsp Butter, divided
  • 1 tbsp Flour
  • 2 cups Milk, warmed
  • 1 cup grated Provolone
  • ¼ cup grated Parmigiano-Reggiano
  • ¼ cup grated Cheddar
  • Salt & Pepper

Instructions

  1. Heat 1 tbsp of butter in a large sauté pan over medium heat. Add the onions, season with salt and pepper, and cook until golden brown, stirring occasionally for about 30 minutes. Once the onions finish cooking, set aside on a large platter.
  2. In the same pan, brown the Good Ranchers’ brats. The brats come fully cooked so browning won’t take long. When browned, remove brats to the platter with the onions.
  3. Add a tablespoon of butter to the pan and saute the mushrooms until golden brown, about 10 minutes. Stir the parsley into the mushrooms and season with salt and pepper. Remove the mushrooms from the skillet and add to the platter.
  4. Add the sliced peppers to the skillet, cooking on medium heat until soft, about 10 minutes. Season with salt and pepper. Remove the peppers to the platter.
  5. Add the final tablespoon of butter to the pan and allow it to melt. Once melted, add the flour and whisk for one minute forming a loose paste. Slowly add the warm milk, whisking continuously.
  6. Allow the sauce to come to a bubbling simmer and then slowly add the provolone, parmigiano-reggiano, and cheddar, whisking to combine. Season to taste with salt and pepper.
  7. To assemble your Philly Cheese Brat, drop a brat into a brioche bun, top with onions, peppers, and mushrooms, and then smother them all with cheese sauce.
