	The New York Strip is an accessible steak that can provide a phenomenal flavor and real steakhouse experience when done right. There are lots of ways to prepare it, but in this recipe blog we will show you one of our personal favorites for cooking a NY Strip Steak. Before we get to the recipe, let’s explore what makes a New York Strip a great steak and how we can bring the best out of it.&nbsp;<h2>The New York Strip:</h2>
	The New York Strip is a great steak to cook consistently because you can normally get them USDA Prime for less than Choice Ribeyes and Filets. They are usually available at most stores, and are not difficult to prepare with the right ingredients and recipe. <li>Where is it cut from? New York Strips are cut from the back or spine of the cattle. They come both bone-in and boneless. The NY Strips neighbor, the cut on the other side of the bone from it, is the filet mignon. Which means when it has a good amount of marbling and is cooked right, it can provide a bite that’s on par with some of the best and most expensive cuts served in steakhouses.</li>	
<li>What to Look For?&nbsp;A great steak starts with a great farm and process. Finding a place - like us at Good Ranchers - that creates a consistently excellent experience is key. We precisely cut each steak, age it to perfection, and flash freeze it to make sure it reaches you at its best every time. Beyond that, the main factor to look for visually is an even distribution of marbling. Look at the image below as an example. Which steak is a better buy?

	The one on the left has more marbling throughout the beef. It probably would grade closer to choice from the USDA. The one on the right has little to no marbling throughout it. That means it is a much leaner cut and can dry out quicker during the cook and have less flavor overall. It would probably be a Select grade or lower. 	<h2>The Best New York Strip Steak Ingredients</h2><ul>
	
<li>3/4 - 1 pound New York Strip Steak</li>	
<li>1/3 Stick Butter</li>	
<li>4 Cloves of Garlic</li>	
<li>2 Sprigs of Rosemary</li>	
<li>10 Sprigs of Italian Parsley</li>	
<li>10 Sprigs of Mint</li>	
<li>1/4 cup Olive Oil</li>	
<li>2 Slices Dehydrated Truffle (Optional)</li>	
<li>8 oz Baby Bella Mushroom</li>	
<li>1/2 tsp. Dried Thyme</li>	
<li>1 tsp. Garlic Powder</li>	
<li>1 tsp. Onion Powder</li>	
<li>(To Taste) Salt</li>	
<li>(To Taste) Black Pepper</li></ul><h2>Cooking Instructions For Our New York Strip Recipe</h2>
	1. Season your Steak with Salt, Pepper, Garlic and Onion Powder on all sides. Let the steak sit for at least 1 hour in your fridge on a wire rack or season immediately before adding into a pan. The wire rack method is recommended.&nbsp;2. In a hot pan with Avocado Oil sear the fat cap of the steak to render the fat.&nbsp;
	3. After the Fat is golden brown sear both sides of the steak to get a nice crust.&nbsp;
	4. After you have gotten a good sear on both sides and drop the heat to medium low and add your butter, Rosemary, 3 cloves of crushed garlic.&nbsp;
	
	5. Once the butter melts and begins to bubble/foam, spoon the butter with the aromatics over the steak for about 30 second on each side or until cooked to your desired temperature.&nbsp;
	6. Thinly Slice your Mushrooms and add a tiny knob of butter into a pan on medium low heat.&nbsp;
	7. Add the mushrooms to the pan after the butter is melted and season with salt, pepper, and dried thyme, then mix.&nbsp;
	8. Cook mushrooms for 4 minutes or until they are soft, then take them off the heat.&nbsp;
	9. Finely Chop your parsley and Mint leaves (separate the steams from the leaves, you only want the leaves).&nbsp;
	10. In a bowl add 1 clove of minced garlic and your herbs, then add your olive oil in, optimally add the dehydrated Truffles.&nbsp;
	11. Plate and Enjoy!

	Important Notes:
	We recommend preparing the chimichurri an hour ahead of time so the herbs flavor gets infused into the olive oil. We also recommend using a cast iron or stainless steel skillet/pan to cook your steak.&nbsp;
	Cook your steak to your desired temperature. Using a meat thermometer on the steak is a great way to get exactly what you want. Pull the steak off the heat when it is 5 degrees less than your desired temp since the steak continues to cook once removing from the pan.

	1: CLEAN YOUR GRILL. Don’t let the last thing you grilled show up on tonight's plate. It's super simple to get your grill clean and ready to cook evenly and cleanly! You can use a metal brush to clean the grates when the grill is hot - makes everything come off easier. 	2: TWO WORDS - MEAT THERMOMETER. You are not a magician and you do not have x-ray vision to see when that meat is fully cooked. Sure, you can go by the feel of the meat - if it's soft like the area under your thumb it's definitely not fully done. But instead of guessing if the meat is as soft as your thumb and possibly serving raw meat, you can just spend $20 and get a solid meat thermometer to always know what temp your protein is at.

		3: CHECK YOUR FUEL REGULARLY. The worst thing is when you fire up that grill and get it to temp only to run out of propane, or to buy the meat and realize you are out of charcoal or pellets and didn't buy any at the store. If you are planning on grilling, check your fuel to make sure you can get the grill HOT and keep it hot.
	
	
		4: ROOM TEMPERATURE MEATS. Letting meat come to temperature out of the fridge for half an hour before grilling will help it cook more evenly. If you cook with cold or even frozen meats, the cooking time is going to be thrown way off and the cut will be cooked more uneven than a bad haircut.
		
	
	
		
		5: 
		UNDERCOOK YOUR FOOD. Yes, you read that right. Your meat will continue to cook after you take it off the grill. Carryover cooking is real and it has dried out food every summer since the beginning of grilling. Plan for food temperature to increase around five degrees after leaving the grill.

		6: LOW &amp; SLOW. Some thicker cuts of meat may sear nicely at a high temp, but overcook before the center even gets warm. To combat&nbsp;this, you can use high temp to get the sear you love, and then put the meat on a medium or lower temperature part of the grill to let is cook all the way through. This keeps you from over-charring the outside and ruining a beautiful&nbsp;bone-in or thick cut of meat.
		
	
	
		
		7: SIDES GIVE VARIETY. Anyone who has made dinner for two has probably felt stressed managing the meat and sides. You don't need an expansive protein menu or a five course meal for your BBQs or grill outs. Let the sides you prepare add variety and focus on making a killer couple of proteins for everyone to enjoy.
		
	
	
		8: GIVE IT A REST. Allowing the meat to rest for 5-10 minutes after cooking lets the juices redistribute throughout the meat. Burgers, chicken, and steak... give them all a rest after you pull them off the grill! America's Wagyu History</h3>
	It was 1976 when four Wagyu bulls were brought to the United States from Japan. There were two Japanese Red Bulls and two Japanese Black bulls.. These bulls were used for crossbreeding with female Angus cattle and other Continental breeds. The crossbreeding of Wagyu and Angus is known as “Wangus” and is not considered a full blood wagyu. It was not until 1993 that three Japanese Black female cows were imported, leading to the first Fullblood Wagyu to be bred in the United States.
	Between 1994 and 1997, about 200 Fullblood Wagyu were imported into the US from Japan. This allowed the wagyu population to thrive like never before in the States, and it seemed like this was only the beginning of American Wagyu. Then, in 1997, Japan designated Wagyu as a national treasure and an export ban on Wagyu cattle was put in place, which led to the rarity of Wagyu outside of Japan that we experience today. 	We see the climbing gas prices every day when we drive past our usual station we stop at, but there are prices rising behind the scenes even faster, and they impact the prices you pay for meat. Rising wheat and corn prices are going to impact the cost of your lunches, family dinners, and meals out. The primary ingredients in the feed of cattle, chicken, and more animals is... you guessed it: Wheat and Corn. In fact, feed can be 50%-70% of the cost in raising calves and cattle, which means the price of beef and meat is going to rise in unison with the feed prices. That means a big increase in meat prices could be about to hit. Let us show you why.<h2></h2><h2>What Made Wheat &amp; Corn Prices Rise?</h2>
	Unfortunately, these rising commodity prices are directly linked to Russia’s invasion of Ukraine. This has put a strain on the supply and markets which has driven up the price. It’s safe to say that this conflict is Putin a lot of strain on a lot of people and products... Moving on! The increase in these prices has been more significant than Gas! We didn’t believe it when we saw it either but look at these charts. The first one is Gas price increase in the past 12 months.<h2>Price Trends</h2>

	It shows an increase of gas in March 2021 at $2.70 to $4.20 in March 2022, which is an overall increase of 55%. That is significant. Gas prices were already on the rise before this extra strain and shortages of supply from the conflict, but inflation of these prices is faster than we can keep up with. Still, if we look at the Wheat and Corn prices for the same time frame, we see these even more alarming curves. (Wheat chart is first and then corn. Each price per bushel.)

	Corn went from $5.40 to $7.58 in the last 12 months, which is an increase of 40.3%, but wheat climbed higher than the other two by a significant amount! Wheat is up 97% since this time last year, hitting the highest price it has ever reached just earlier this month at $12.94. We saw about a 20% increase in wheat and corn in 2021, but these recent jumps are adding to those already inflated prices.

How Wheat & Corn Prices Will Make Beef Costs SOAR

	Have you seen the packages of beef with a bright red color on the grocery store shelves? They look so fresh that they must have been cut, packaged, and put out this morning... or were they? It turns out that the color of meat is being manipulated by unnatural means – specifically gases like Nitrogen, CO2, and even Carbon Monoxide. Yes, that scentless, deadly gas is what they spray a large amount of store-bought, pre-packaged meat with. Now, they claim it is not a harmful amount of gas, but it is causing harm to consumers across the country who buy products that look fresh but really could not be further from it. This color manipulation happens through a process called MAP (Modified Atmosphere Packaging) and we want to show you why Vacuum-Sealed is so much better.
	<h2>When Red Is Not Really Red</h2>
	I am sure we can remember the time the infamous “Dress” photo floated around the internet that had people seeing different colors while looking at the same picture. Was it Blue and Black or White and Gold? It actually was all a trick of the eye. Turns out, the color of the meat in your grocery store is a trick of the eye as well. In this instance though, they want us to see a color that should not be there. Through MAP (Modified Atmosphere Packaging), Companies remove the oxygen that causes meat to lose its red color and replace it with a different mixture of gases to slow the process of going from red to more of a brown. This means the meat could be going bad on the inside and still look brand new on the outside, deceiving you and robbing you of buying fresh, quality products. Also, the gases they use are rarely told to customers on the package.<iframe src="https://giphy.com/embed/Xgr84DtxZgcvznHygM" width="480" height="294" frameborder="0" class="giphy-embed" allowfullscreen="">
</iframe><h2>Brown is Better?</h2>
		Now, keeping products away from oxygen is not bad; that helps the food stay fresher for longer. It is what some people add in place of it that is worse. That is why we vacuum-seal and flash freeze all of our beef, chicken, and seafood. It removes the oxygen and locks the meat in an air-tight vacuum, keeping it fresh and locking in the quality. 
	With vacuum sealing, you may see your beef has a brownish, red color before opening it. Do not be alarmed, that is what happens when the beef is kept from oxygen. </iframe><h2>Don't Follow The "MAP"</h2>
		One of the most concerning things about MAP is that companies do not have to display the gases they have added to the packaging because it is not considered an ingredient. Ironically, the only way to tell if your red meat, colored by gas, is bad, is to see if the packaging is expanding from the gas bacteria produce inside. One sure fire way to avoid spoiled meat on the shelves is to never buy puffed up packages. The better option is to buy Vacuum-Sealed packages though. Even though vacuum sealing doesn’t give you that fake, bright red color, it does give you assured freshness, easy storage, and fresher products than MAP ever could.
