In the meantime, grab a large bowl of half ice, half water for an ice bath. Remove the broccolini and shock in the ice water.</li>    <li>In a large sauté pan, add in the olive oil and butter. Already, the community has faced the loss of over 3,000 cattle, with financial losses to ranchers nearing $4,000,000—a figure expected to climb as the fires continue and more reports of damage and lost cattle emerge. Yet, these numbers barely begin to convey the full scope of the financial and emotional turmoil these caretakers are experiencing.

	Amidst this crisis, individuals like Shane Pennington, a 56-year-old agriculture producer from Canadian, Texas, personify the profound impact of the Smokehouse Creek Fire. 
	<a href="https://www.wfft.com/news/national/wildfires-have-devastated-the-texas-cattle-industry-and-the-effects-may-be-long-lasting/article_84e17d3a-d593-5d89-a04c-656daf106e92.html" style="color:#da291c; text-decoration: underline">In a recent interview</a>, Pennington shared the harrowing sight that met him upon returning to his ranch: about 50 of his cattle lay dead, while surviving nursing cows desperately searched for their lost calves. The surviving animals had severe injuries from the flames, with some having their tails burned off and others left blind by the flames.

	 “It just burned all the hair off them,”

<li>In a gallon ziplock bag, marinate the chicken cubes in olive oil, paprika, garlic powder, onion powder, salt, and pepper. Seal and shake the bag to coat the chicken evenly and set in the fridge to marinate (this can be done up to a day before cooking the chicken).</li>	
<li>While the chicken is marinating, heat 1 stick of butter on medium-low heat in a saucepan. Add the minced garlic, parmesan, hot sauce, red pepper flakes, and parsley and stir to combine. Once combined, allow it to cook on low for 3 minutes and then remove the pan from the heat and take out 1/3 of the mixture.</li>	
<li>Put the marinated chicken in a bowl and toss in the 1/3 garlic butter that you separated and then place in a 400° air fryer for 5 minutes. After the chicken has cooked for 5 minutes, turn or toss the chicken and baste with some of the remaining garlic butter (don’t forget to clean your basting brush between each coating of the chicken). Cook for an additional 5-6 minutes or until the internal temperature reaches 165°.</li>	
<li>Once the nuggets are finished cooking, baste them with a final pass of the garlic butter and sprinkle with some extra parmesan cheese and serve hot. I’ve served this with fries, sweet potatoes, rice, mashed potatoes, pasta—it really goes with everything!</li></ol><p>

Turn the heat down to medium low and add the onion slices to the skillet and cook in the steak juices until onions are golden in color (this will take a few minutes).</p><p>To assemble the sandwich, take the hot bread out of the oven and place the steak, onions, and provolone slices on the bottom side of the bread. Broil on high to melt the cheese. Toast the top bread slice (less than 5 minutes—just babysit it!). 	<a href="https://www.biorxiv.org/content/10.1101/2023.04.21.537778v1.article-info">new study done by the University of California</a> shows that <strong>the climate impact of lab-grown meat could be up to 25 times worse for the environment than traditionally-raised, real meat.</strong></span></p><p>

	As the graph above shows, even the maximum bovine <strong>emissions are significantly less than the sum of the PF (Purification Factor) of the lab-grown alternatives.</strong> The emissions are higher due to the large amount of energy needed to refine and purify growth medium components. These are the components that help cultured meat grow, and since any presence of bacteria can destroy the cultured meat cells, the components must go through extreme processes of purification that rely heavily on fossil fuels and generate significantly more greenhouse gas emissions than real meat. Anyone claiming lab-grown meat has less environmental impact is taking a narrow perspective that doesn’t include all the facts.&nbsp;</span></p><p>
	If we scale up current technologies to produce cultured meat, we will be doing a disservice to our agricultural industry and our environment. Emissions wouldn't decrease, but would instead increase anywhere from 4 to 25 times based on this study. Yes, a mammoth meatball is hilarious. It’s a great punchline at the end of a joke, but the problem is these aren’t jokes but real scientific experiments informing an industry hard set on a process to grow meat in a lab and harm the planet and farmers worldwide in the process. We should be wise and efficient in the use of our resources, and this new study clearly shows lab-grown meat will undermine a key American industry and replace an agricultural system that’s one of the best in the world with an inferior substitute.&nbsp;

<p>Happy Cinco De Mayo! It's the 5th of May, which means it's time to get your taco on! Whether you like your tacos simple or loaded with toppings, there's no denying that the humble taco is one of America's favorite foods. But why settle for average when you can have amazing? That's why we've put together a recipe for tacos using American Wagyu beef. This premium meat is known for its intense flavor and juiciness, and it makes for some seriously delicious tacos. Plus, we’ve got the perfect secret sauce to compliment. So fire up the skillet and get ready to enjoy the best tacos of your life.</p><h2>Ingredients</h2><h3>Seasoning: (Create ours or use your own!)</h3><ul>
	<li>1 tablespoon of chili powder</li>	<li>1 teaspoon of ground cumin</li>	<li>1 teaspoon of garlic powder</li>	<li>1 teaspoon of onion powder</li>	<li>1 teaspoon of paprika</li>	<li>½ teaspoon of sea salt</li>	<li>½ teaspoon of fresh ground black pepper</li>	<li>½ teaspoon ground cayenne pepper</li></ul><p>
	Combine all spices in a container and set aside. (Use a lid to keep it fresh if you make it a while before cooking!)</p><h3>For the Secret Sauce:</h3><ul>
	<li>2 teaspoons of coriander seeds</li>	<li>2 teaspoons of cumin seeds</li>	<li>2 tablespoons of olive oil</li>	<li>3 jalapeño peppers, seeded and diced</li>	<li>1-2 serrano peppers, seeded and diced (if you want extra heat)</li>	<li>4 cloves of garlic chopped</li>	<li>1 medium onion diced</li>	<li>12-ounces  of tomato sauce</li>	<li>1 tablespoon of agave syrup</li>	<li>½ teaspoon of garlic salt</li></ul><h3>For the Pickled Onions Topping:</h3><ul>
	<li>1 medium red onion, very thinly sliced</li>	<li>½ cup water</li>	<li>¼ cup distilled white vinegar</li>	<li>¼ cup apple cider vinegar or additional white vinegar</li>	<li>1 ½ tablespoons maple syrup or honey</li>	<li>1 ½ teaspoons fine sea salt</li></ul><h3>The Wagyu Ground Beef Tacos:</h3><ul>
	<li>1 pound of Good Ranchers American Wagyu ground beef</li>	<li>2 tablespoons of above seasoning or your own</li>	<li>¼ cup of water</li>	<li>Your choice of cheeses and toppings </li></ul><h2>Instructions</h2><h3>For the Pickled Onions:</h3><ol>
	<li>Pack the onions into a heat-safe vessel.</li>	<li>In a small saucepan, combine the water, both vinegars, maple syrup, and salt. Bring the mixture to a simmer over medium heat.</li>	<li>Pour the mixture over onions and press them safely into the mixture with a fork or knife. Let the pickled onions cool to room temperature and then enjoy!</li></ol><h3>For the Secret Sauce:</h3><ol>
	<li>Heat a cast iron pan or skillet to medium heat. Toast the coriander and cumin seeds while stirring until fragrant.</li>	<li>Add the olive oil and raise the heat to medium-high. Toss in the onions and peppers and sauté for about 5 minutes. Once they are gaining color and softening, add the garlic. Sauté until onions begin to brown.</li>	<li>Add tomato sauce, agave syrup, and salt and cook for 3-5 minutes.</li>	<li>Blend until it has a smooth consistency. </li>	<li>Set the sauce aside in a bowl until ready to serve</li></ol><h3>For the Wagyu Ground Beef Tacos:</h3><ol>
	<li>Bring a large cast iron or nonstick pan to medium-high heat and add your Wagyu ground beef. Break up the meat and stir until browned and cooked through.</li>	<li>You can choose to drain most or half of the fat out of the pan. We prefer to leave half in because that wagyu marbling is what gives these tacos their distinct flavor! </li>	<li>Keep the heat going and add taco seasoning to the beef and add ¼ cup of water. Stir and add more water if necessary. Make sure the seasoning has been incorporated throughout the meat. Add more water and simmer as necessary to reach the right consistency.</li></ol><p>
	All that is left to do is to put your delicious wagyu taco meat into your shells or tortillas of liking, top with everything you love - definitely the pickled onions - and then finally drizzle the secret sauce on top!
