Bacon Breakfast Hash

Start your day right with this Bacon Breakfast Hash! This dish combines roasted sweet potato cubes, sautéed onions, garlic, and Good Ranchers Applewood Bacon—making the most important meal of the day more delicious than ever. Learn how to make it below!

Ingredients: 

  • 3 cloves Garlic
  • 4 large Sweet Potatoes
  • 1 medium White Onion
  • 6 slices Good Ranchers Applewood Bacon
  • 4 tbsp Olive Oil
  • Salt and Pepper
  • Parsley for garnish

Instructions: 

  1. Pre-heat oven to 450°F.
  2. Peel and chop sweet potatoes into ½ inch cubes.
  3. Toss in 2 ½ tbsp olive oil and season generously with salt and pepper.
  4. Place in a 9x13 glass pan and cook in a 450°F oven for 55-60 minutes, flipping the potatoes at least 4 times during roasting.
  5. In the last 15 minutes of the potatoes cooking, chop a white onion into fine, bite-sized pieces and cook on medium-low heat in a skillet with 1 ½ tbsp olive oil until they are soft and translucent.
  6. Once the onion is developing a bit of color, add the minced garlic and cook until soft and fragrant. Take the garlic and onion mixture out and set aside.
  7. Cook the Good Ranchers Bacon in the skillet on medium until preferred crispiness. Take the bacon out of the pan and cut into bite-sized pieces.
  8. In batches, fry 6 eggs in the skillet with the leftover bacon fat.
  9. To assemble the hash, toss the sweet potatoes, onion, and garlic together. Then top the mixture with bacon and fried eggs. Garnish with chopped parsley and enjoy a fantastic brunch!
