Cheesy Steak Quesadilla Recipe
A Steak Quesadilla is a delicious snack or party food! When it's filled with tasty cheese, peppers, onions, and the best steak from yours truly (us), you will want to make these all the time! A great steak quesadilla is found in the steak, so make sure you have some of our USDA Prime or Upper Choice cuts of beef on hand, all sourced from American farms. Find them here.

Ingredients
- 1 cup Good Ranchers steak cooked and chopped*
- 2 tbs oil divided
- 1 bell pepper diced
- ½ yellow onion diced
- 4 flour tortillas 8-inchs in diameter
- 1 cup cheddar cheese grated
- 1 cup pepper jack cheese grated
- ¼ cup olives
Instructions
- Cook your steak* then dice into cubes. To cook the steak, add some oil to a pan and get it hot, then add the steak and let the first side sear. Once it's formed a nice crust, flip it over and cook until the steak reaches an internal temp of 130. It will cook a little further when we finish the quesadilla, so medium-rare is the perfect start.
- In a medium skillet, heat 1 tablespoon of oil over medium heat. When oil is hot, add bell pepper and onion and sauté until soft, approximately 8 minutes. Cover with a lid to help the process. If peppers and onion become too dry add ¼ cup or more water to help continue sautéing without burning them.
- Once tender, remove the bell pepper and onions and set aside. Wipe out the skillet, add ½ tbs oil and heat over medium heat. Fold tortillas in half then place two in the pan at a time. Stuff with cheese, steak, peppers, and onion.
- Cook until both sides are golden brown and the cheese is melted, about 2 minutes each side. Repeat with remaining two tortillas.
- Serve with salsa, sour cream and guacamole.
- *You can use any type of steak for this recipe. Use our Flat Iron Steak, NY Strip Steak, or even our Black Angus Ribeyes to elevate the dish.
- *If you want to add some heat add fresh or pickled jalapenos or green chile to the quesadilla!
