Ingredients:

1 teaspoon olive oil

1 bell pepper, diced

1/2 small yellow onion, diced

2 Good Ranchers Smoked Bratwursts, quartered and sliced into coins

1 cup fresh spinach, roughly chopped

8 large eggs

1/2 cup milk
-
1/2 cup shredded mozzarella cheese

1/2 teaspoon garlic powder
-
1/2 teaspoon smoked paprika
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper

8 English Muffins

Optional toppings: bacon, tomato, avocado, more cheese, etc.
Instructions:
1. Prep the oven & pan: Preheat the oven to 350°F. Grease an 8x8-inch baking dish or line with parchment paper for easy removal.
2. Sauté veggies: Heat olive oil in a skillet over medium-high heat. Sauté the peppers and onions until softened, about 4-5 minutes. Add the bratwurst and sauté for 3-4 minutes. Stir in chopped spinach just until wilted, about 30 seconds. Remove from heat.
3. Mix the eggs: In a large bowl, whisk together eggs, milk, cheese, garlic powder, smoked paprika, salt, and pepper until well combined.
4. Assemble the bake: Spread the bratwurst and veggie mixture evenly in the prepared pan. Pour the egg mixture over top, making sure it’s evenly distributed.
5. Bake: Bake for 35-40 minutes, or until eggs are set in the center. A knife inserted should come out clean.
6. Cool & cut: Let cool for at least 10 minutes before slicing into 8 squares for sandwiches.
7. Make sandwiches: Place one square inside each English muffin. Add toppings of choice (cheese slice, bacon, avocado, tomato, hot sauce, etc.). Enjoy immediately or wrap individually in foil or parchment for storage. Freeze for up to 3 months. Reheat in the oven, toaster oven, or microwave before serving.
