Ingredients

 

Chicken:

  • 1 pound Good Ranchers Chicken Breasts

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • ½ teaspoon garlic powder

 

Breading:

  • 1 cup panko breadcrumbs

  • ¼ cup grated parmesan 

  • ½ teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • 1 egg

 

Hot Honey Glaze:

  • ¼ cup honey

  • 1 teaspoon red chili flakes, plus more to taste

  • 1 tablespoon butter

  • Pinch of salt


Instructions

  1. Prep the Oven and Coating: Preheat the oven to 400°F. Line a sheet pan with parchment paper.

  2. Cut the chicken: Pat the chicken dry, and cut into bite-sized pieces. Set aside.

  3. Toast the Breadcrumbs: In a bowl, mix the panko, Parmesan, paprika, and garlic powder. Spread the mixture evenly on the prepared sheet pan and bake for 2 to 3 minutes, until lightly golden. Keep a close eye on them so they don’t burn. Remove from the oven and let cool slightly.

  4. Bread the Tenders: Season the chicken with salt, pepper, and garlic powder. Dip each tender into the egg, letting any excess drip off, then coat in the toasted breadcrumb mixture, pressing gently so it sticks. Transfer the coated chicken to a parchment-lined sheet pan. Repeat with the remaining chicken.

  5. Bake: Bake at 400°F for 15 to 18 minutes, flipping halfway through, until golden brown and cooked through. Remove from the oven and let rest while you make the glaze.

  6. Make the Hot Honey: In a small saucepan over low heat or in the microwave, melt the butter. Stir in the honey, chili flakes, and a pinch of salt. Drizzle over the chicken and toss to coat. Enjoy immediately.
