Ingredients:
- - 4 Good Ranchers Chicken Breasts
- - 2 tbsp Olive Oil
- - 4 cloves Garlic, minced
- - ¾ cup Sun Dried Tomatoes in Oil
- - 2 tsp Italian Seasoning
- - 1 tsp Kosher Salt
- - 1 tsp Pepper
- - 1 Cup Orzo
- - 2 ¾ cup Chicken Broth
- - 1 cup Heavy Cream
- - ½ cup Parmesan Cheese, grated
- - 3 cups Spinach
Instructions:
1. In a large pan or Dutch oven, heat olive oil on medium heat.
2. Sprinkle seasonings on both sides of the chicken and sear for about 4-5 minutes on either side.
3. Cook until chicken reaches 160 degree and then remove and set aside.
4. Add garlic, tomatoes, and orzo. Mix to coat and toast for one minute.
5. Add chicken broth and bring to a boil.
6. Once boiling, reduce to medium-low, cover and cook stirring often until the orzo is cooked through, 10-15 minutes, adding the spinach the last 5 minutes.
7. Finish the dish by adding heavy cream, parmesan and the chicken breasts to the top to warm chicken through to 165 degrees.
8. Slice chicken breasts and serve on top of the orzo.
