Mediterranean Salmon Bowl

This isn't just a recipe, it’s a build-your-own bowl of bold, fresh flavors that you can customize to fit your preferences.  Start with your base (spinach, arugula, lettuce, rice, or orzo are all great options). Add something creamy like hummus or a scoop of garlic cream sauce. Then comes the protein, which is a crispy air-fried salmon that cooks in minutes while you prep everything else. Top it off with all your favorites like a cucumber, feta, and tomato salad and more to tie it all together.

 

 

Ingredients:

- 2 Good Rancher’s Salmon Filets

- 1 tsp Italian Seasoning

- 1 cup Cucumber, diced

- 1 cup Cherry Tomatoes, halved

- ¼ cup Red Onion, diced

- ¼ cup Feta Cheese, crumbled

- 1 tsp Balsamic Vinegar

- 2 tbsp Olive Oil

- Fresh Parsley, chopped

- 1 cup Plain Greek Yogurt

- 1 clove Garlic, grated

- Salt and Pepper

- 2 cups Spinach

- 1 Lemon

- ¼ cup Olives

- ¼ cup Hummus

- Fresh Parsley, chopped

 

For the Flatbread:

- 1 tsp Sugar

- ½ cup warm Water

- 2 ½ tsp Yeast

- 2 ¼ cup Flour

- 1/2 cup plain Yogurt

- 1 tsp Salt

- 1 tbsp olive oil

 

 

Instructions:

 

 

For the Air Fried Salmon:

1. Let the salmon thaw and come to room temperature.

2. Preheat your air frier to 400 degrees.

3. Gently pat each salmon piece with a paper towel and then brush with olive oil and season with salt, pepper, and a very light sprinkling of Italian seasoning.

4. Place on a piece of parchment paper in your air frier and cook at 400 degrees for 8-10 minutes.

 

 

For the cucumber, tomato, and feta salad: 

1. Chop one cup each, cucumbers and tomatoes into bite sized chunks and combine in a bowl with ¼ cup of feta cheese crumbles, ¼ cup finely diced red onions, 1 tbsp olive oil, 1 tsp balsamic vinegar, 1 tbsp chopped fresh parsley, 1 tsp Italian seasoning, salt and pepper.

 

 

For the garlic cream:

1. Add 1 cup whole-milk Greek yogurt, 1 tbsp olive oil, 1 tbsp fresh lemon juice, 1 garlic clove grated, ½ tsp kosher salt, pepper, and 1 tbsp water into a bowl and mix.

2. Add more water or oil to thin it out if you feel like it’s too thick. Adjust the lemon juice, salt and pepper if you feel like it needs extra flavor.

 

 

For the homemade flatbread: 

 

1. In a small bowl combine sugar, warm water, and yeast.  Let that sit about 10 minutes.

2. In a larger bowl combine flour, yogurt, salt, oil, and then add the yeast mixture. Knead the dough for about 10 minutes, until it becomes smooth.

3. Place in an olive oil coated bowl and cover with a damp cloth for 1 hour or until the dough doubles in size.

4. Divide the dough into 8 equal portions and roll thin using a rolling pin (if the dough is sticking to your counter, use a light dusting of flour as you roll).

5. Cook the dough in a cast iron skillet over high heat.  Each side should be cooked until it is puffed up and has bubbly burnt spots.

6. To finish, lightly brush the flatbread with melted butter. Serve warm.
