Poppyseed Chicken & Rice

Ingredients:

Salt and Pepper

A drizzle of Olive Oil

2 lbs. package of Chicken (breast, thighs, or strip cut chicken all work great!)

1 10.75 oz can of Cream of Chicken Soup

1 16 oz tub of Sour Cream

1 sleeve of Ritz Crackers

1 stick of Butter

A few pinches of Poppyseeds

Jasmine Rice




Instructions:

1. Pre-heat oven to 350 degrees.  Cut the chicken up into bite-sized cubes (skip this step if you’re using the strip cut chicken), season with salt and pepper, and sauté in a pan with a drizzle of olive oil until just cooked through.

2. While sautéing, in a medium sized bowl mix together the cream of chicken soup and tub of sour cream.  Once the chicken is cooked, add the chicken to this sauce and mix.

3. Pour the chicken and sauce mixture into a 9-13 baking dish.  

4. Crush the Ritz crackers in the sleeve or in a zip top bag. Sprinkle that on the top of the dish.

5. Sprinkle the top of the dish with a few pinches of poppyseeds.

6. Melt the stick of butter and drizzle over the dish.

7. Bake at 350 degrees until hot and bubbly.

8. Serve over Jasmine rice.  This fast dinner pairs perfectly with roasted broccoli or steamed green beans.
