Ingredients
1 lb. Good Ranchers’ Shrimp
2 tbsp Butter
7 Roma tomatoes, diced
2 Limes, juiced
2 Avocados, diced
1 small Yellow Onion, diced
1-2 Jalapenos, deseeded and diced
2 tbsp Vinegar
2 tbsp Ketchup
Salt and Pepper
Tortilla Chips
Instructions
In a bowl, marinade the shrimp in the juice of one lemon, salt and pepper for 20 minutes.
Heat a skillet on medium high and melt the butter (being careful not to let it burn).
Sauté the shrimp for 2 minutes on each side. Take the cooked shrimp out and dice into bite sized pieces.
In a large bowl, add the diced tomatoes, avocados, onion, jalapenos, lime juice, vinegar, ketchup, and shrimp.
Mix and season with salt and pepper to taste. Serve with tortilla chips.
