Spicy Shrimp Pasta

Ingredients: 

 

- 1 lb Good Ranchers Shrimp

- 2 tbsp Butter

- 12 oz Pasta 

- 1 tbsp Olive Oil

- ½ tsp Red Pepper Flakes (double this if you like it truly spicy!)

- 3 cloves Garlic, minced

- 1 24 oz Jar Marinara Sauce

- ½ cup Heavy Cream

- ½ tsp Italian Seasoning

- 1 Onion, chopped

- Salt and Pepper to taste

- Optional: Parmesan Cheese & Basil


 

Instructions:

 

1. Cook the pasta in salted water according to directions, to al dente.  Reserve ½ cup of the pasta water before draining the pasta and setting it aside.

 

2. While the pasta is cooking heat a large skillet on medium high.  Heat 2 tbsp butter in the skillet, add the shrimp, red pepper flakes, and a good seasoning of salt and pepper. Cook the shrimp for about 2 minutes on either side (until they are cooked through, but not a moment more!).

 

3. Remove the shrimp from the skillet, set aside, and turn the heat to medium low.  Sauté the chopped onion in 1 tbsp olive oil until translucent, about 5 minutes.

 

4. Next add the garlic and sauté together for 2 minutes.  Finally, add the jar of marinara sauce, heavy cream, Italian seasoning and cook for 10 minutes.

 

5. For the last two minutes of cooking, add the pasta, shrimp, and any juices to the sauce.  If the pasta is too thick use the pasta water to thin it out.

 

6. Plate the spicy pasta and finish with a sprinkle of parmesan cheese and a garnish of fresh basil.
