Biscuits and Sausage Gravy

For the Gravy:

1 lb Good Ranchers Ground Classic Pork Sausage

¼ cup All- Purpose Flour

2 cups Milk

Salt and Pepper


For the Biscuits:

2 cups all-purpose Flour

2 ½ tsp Baking Powder

½ to ¾ tsp Salt

6 tbsp cold, unsalted Butter 

¾ cup Milk

 

Instructions

1. To make the biscuits, preheat oven to 450°.

2. Using a box grater, grate the cold butter and place in the freezer while you prep the other ingredients. In a large bowl, whisk together the flour, baking powder, and salt.

3. Take the butter from the freezer and add it to the flower mixture.  Use your fingers to work the butter into the flour until it resembles coarse crumbs.

4. Add the milk and mix until most of the dry ingredients are moistened. Gather the dough, form into a ball, and knead gently in the bowl.

5. Transfer to a lightly floured surface and roll or pat the dough to ½ in thickness. Cut the biscuits with a glass or biscuit cutter.

6. Place biscuits on a parchment lined sheet pan and brush the tops with melted butter.

7. Cook for 10-12 minutes or until a golden color. Let cool for 10 minutes.

8. In a cast iron skillet on Medium high heat, brown the ground classic pork sausage and break the meat up into small chunks with a spatula (Like, really brown it. You’re going to want the flavor from making sure the meat has some real brown color).

9. With the pork and it’s rendered fat still in the skillet - sprinkle flour over the meat and stir.

10. Cook the flour for 2-3 minutes and then gradually add in the milk, stirring well as it forms into a gravy.

11. Turn the heat down to low and continue to cook for another 2-3 minutes, stirring often. Salt and pepper to taste and serve the sausage gravy over homemade biscuits.
