Instructions
1 lb Good Ranchers’ Ground Beef
2-4 Sweet Potatoes
1 tsp Olive Oil
1 tbsp Chili Powder
1 tbsp Cumin
½ tsp Salt
½ tsp Garlic Powder
¼ tsp Black Pepper
1 8oz can Diced Tomatoes
1 8oz can Black Beans, drained
1 cup Cheddar Cheese, grated
½ cup Sour Cream
1 tsp Half and Half
1 ripe Avocado, sliced
Instructions
1. Preheat your air fryer to 400 degrees. Wash sweet potatoes, poke them with a fork several times, rub them with olive oil, and season with salt and pepper.
2. Place in the air frier and cook for 40 minutes flipping the potatoes once halfway through cooking.
3. While the potatoes are cooking, heat a cast iron skillet on medium high and brown the ground beef, draining any additional liquid as it cooks.
4. Once cooked through, add the chili powder, salt, garlic powder, and black pepper, mixing all the spices with the ground beef.
5. Next, add the full can of diced tomatoes and the drained black beans.
6. Turn the heat to low and simmer, stirring frequently, until potatoes are finished.
7. Preheat oven to 350 degrees. Once cooked through, place the potatoes in a small baking dish, open, and carefully mash the insides with a fork.
8. Top each potato with a generous scoop of chili and evenly distribute the cheddar cheese to top the chili.
9. Bake the dish for 10 minutes or until the cheese is melted and the chili is bubbling.
10. Mix the sour cream with the half and half and drizzle over the sweet potato and garnish with slices of fresh avocado.
