Good Ranchers quality chicken is good for pretty much any creation you want to whip up in the kitchen or at the grill. Since our all-natural chicken comes pre-seasoned and bursting with flavors, we also love using it in a few easy pasta dishes and casseroles, making for one of the easiest dinner ideas around. Here are 3 of our favorite and super easy chicken pasta recipes using delicious Good Ranchers chicken: Easy Lemon Chicken and Pasta Ingredients: 1lb penne pasta 2 pieces of Good Ranchers chicken Salt and pepper to taste 3 garlic cloves minced or sliced 3tbsp olive oil 2 lemon wedges (or use the Good Ranchers lemon chicken!) 1/2 cup of grated Parmesan Cheese Directions: Cook pasta according to package. Season chicken with salt and pepper. Grill or pan sear chicken until golden and completely cooked. Let cool completely and transfer to a cutting board, cutting chicken into strips. Add oil and garlic to sauté pan for about 2-3 minutes. Transfer warm pasta, fully cooked chicken and garlic into one large pot, sprinkle lemon over the mixture and mix until fully combined. Serve warm with Parmesan cheese and enjoy.

One Pot Creamy Mushroom Chicken Pasta Ingredients: 4 chicken breasts Salt and pepper for seasoning 1 tbsp olive oil, ivided 4 garlic cloves garlic, minced 1/3 cup  chicken stock/broth 8 ounces brown or Cremini mushrooms, sliced 1 quart chicken broth, (or stock) 12 ounce (375 ml) can evaporated milk* 1/3 cup milk 10 ounces uncooked penne pasta (just over 4 cups) 1 cup Parmesan cheese Chopped parsley, for garnish (optional) Directions: Season chicken with salt and pepper or use Good Ranchers pre-seasoned chicken for an easier dinner option. Then heat 2 teaspoons of oil in a large saucepan over medium heat. Add chicken and sear equally on both sides until golden brown, cooked all the way through and remove and set aside. Add remaining oil to the pan and sauté the garlic, then pour in the chicken stock and simmer for about 5 minutes. Add the mushrooms and cook 2-3 minutes, stirring occasionally. Then, add the remaining broth, condensed milk, salt and pepper, and bring to gentle simmer. Add pasta and simmer until pasta is al dente, about 15 minutes, still stirring occasionally. Stir in the Parmesan until creamy, then remove from heat and allow to sit for 5 minutes as sauce thickens. Slice the chicken into strips and mix into the pasta. Garnish with parsley and extra Parmesan, and serve warm. BBQ Ranch Chicken Casserole Ingredients: 3 Good Ranchers chicken breasts or about 1 lb of chicken 1 lb dry pasta 1 cup can sweet corn 3 fresh Roma tomatoes chopped 1 1/2 cup shredded Mexican or Monterrey Jack cheese 1 cup shredded Monterrey Jack cheese for topping (or any preferred shredded cheese) Salt and pepper to taste 1 1/4 cups ranch dressing (fat free or low fat is fine) 3/4 cup of your favorite BBQ sauce Directions: Cook pasta per package instructions until almost done, but careful not to overcook. Grill chicken until completely done, then chop or shred into small pieces, set aside. Preheat oven to 350 and lightly grease a 9x13 casserole dish. In a large mixing bowl, combine diced tomatoes, corn, cooked pasta and chopped Good Ranchers chicken. Add a little salt and pepper and mix well. Add BBQ sauce and ranch to the bowl and combine until evenly distributed. Add 1 1/2 cups of cheese and mix until completely blended. Transfer entire mixture to the casserole dish and spread it evenly. Sprinkle remaining cheese over the dish and bake for 15-20 minutes. This is also an easy chicken and pasta casserole you can make ahead of time and freeze. Just let thaw completely and cook for 20 minutes and serve.
