4 Easy Side Dishes For Chicken

It’s no secret chicken is one of the most popular dinner options. Not only are there a ton of ways to cook chicken, there are so many sides that pair perfectly with chicken. We’ve found that most people stock up their freezers with chicken, which is made easier-than-ever with Good Ranchers chicken, which comes individually packed and vacuum-sealed.

So if chicken is a regular on your dinner table, whether baked, fried, grilled or something else, we wanted to share a few side dishes you can make in no time, that hopefully the whole family will love.

Here are 4 side dish recipes that pair perfectly with your Good Ranchers chicken:

Pan Sautéed Zucchini


1 tbsp extra-virgin olive oil

2 garlic cloves, minced

3 zucchini, sliced

1/2 tsp dried oregano

Salt and Pepper to taste and crushed red pepper flakes

1/4 cup freshly grated Parmesan Cheese


In a large skillet, heat oil over medium to high heat. Add garlic and sauté for about 30 seconds. Add zucchini and oregano. Cook until zucchini is tender, about 8-10 minutes. Gently season with salt, pepper, and a pinch red pepper flakes. Top with Parmesan and serve warm next to your Good Ranchers chicken. 

Homemade Mashed Potatoes


3 lb. potatoes (about 4 large, combo of russets and Yukon Golds – you can peel or not peel, up to personal preference)

Kosher salt and Freshly ground pepper, to taste

1 stick butter

1/2 cup milk

1/2 cup sour cream (or low fat sour cream)


  1. In a large pot, cover potatoes with water and add pinch of salt. Bring to a boil and cook until soft, usually about 15 to 17 minutes. Drain and return potatoes to pot.
  2. Use a potato masher to mash potatoes until smooth, no longer clumpy, unless preferred.
  3. Melt butter and milk until warm in a small saucepan.
  4. Pour over warm milk-butter mixture and stir until completely combined and creamy, then add sour cream, stirring until combined.
  5. Season with salt and pepper, serve warm with extra butter on top (or leave on the side so each person can add as much or as little as they’d like). Cut up chives or shredded cheese also makes for another easy garnish.
Fully Loaded Cauliflower


1  head cauliflower, cut into florets

6 bacon slices

1/2 cup sour cream

1/4 cup mayonnaise or Miracle Whip

1 tbsp lemon juice

1/2 tsp garlic powder

Kosher salt

Freshly ground black pepper

1 1/2 cup shredded cheddar

Optional: 1/4 cup chopped chives


  1. In a large skillet, bring ¼ cup of water to boil. Add cauliflower, then cover pan, and steam until tender, about 4 minutes. Drain in a colander and let cool.
  2. In a large skillet over medium heat, cook bacon until crispy, then transfer to a paper towel-lined plate to drain. Chop bacon.
  3. In a large bowl, whisk sour cream, mayonnaise, lemon juice, and garlic powder, then add cauliflower and toss gently. Season with salt and pepper, then using a spatula, fold in bacon, cheddar, and chives. Serve warm or at room temperature. You can also add onions.
Grilled Sweet Potato Slices


2 lb. sweet potatoes (about 5-6 medium), cut into 3/4″-thick wedges

1/4 cup canola or vegetable oil

1 tsp ground cumin

Kosher salt

Freshly ground black pepper

1/2 cup mayonnaise or Miracle Whip

1 tbsp lemon juice


  1. Heat grill to high. Toss sweet potatoes, oil, and cumin in a large bowl and season with salt and pepper.
  2. Grill sweet potatoes usually about 12 – 15 minutes, turning occasionally. You can also tell they are done when you can easily insert a fork into the center of the potato wedge.
  3. In a bowl, stir mayonnaise and lemon juice and season with salt and pepper.
