Our Favorite Loaded Chicken Nacho Recipe

We don’t know about you, but we love chicken and we love nachos, so we wanted to share our very favorite chicken nacho recipe. We already shared how our Good Ranchers chicken is perfect for a number of recipes like these chicken pasta recipes, but now we want to share just how easy it is to use Good Ranchers chicken in delicious nacho recipes.

Loaded chicken nachos are also a great way to utilize leftover chicken. You can also easily substitute Good Ranchers steak for this nacho recipe, and you’ll love it just as much.

The Best-Ever Loaded Chicken Nacho Recipe
  1. Take your individually wrapped Good Ranchers chicken and grill it to your liking. Our chicken already comes pre-seasoned, so you don’t even need to do anything to prep your chicken, unless you want to. We recommend grilling 2-3 breasts, and once cooled, shred into smaller pieces. We find shredding chicken with two forks is the easiest method, but you can even cut and slice it if you prefer.
  2. Find your favorite nacho chips and evenly layer on an oven-safe plate or baking dish. You can also use a baking sheet lined with aluminum foil. If you want to make colorful chicken nachos, try the blue or tri colored tortilla chips that can be found at most local grocery stores. If you aren’t sure which chips to get, we prefer using Restaurant-Style chips, as you can surely load these up with all kinds of delicious toppings (see next steps!).
  3. Sprinkle the nacho chips with your favorite shredded cheese (we love Mexican Cheese or Colby Jack shredded cheese, but any shredded cheese will work). We even love a good blend of cheeses, so get creative with Mozzarella or Sharp Cheddar.
  4. Sprinkle your Good Ranchers shredded chicken on top of the cheese. Then sprinkle with a can of drained black beans. If you’re baking a lot of nachos, make two layers, all with the same toppings.
  5. We think frozen corn is an awesome addition to your loaded chicken nachos. Sprinkle 1-2 cups of frozen corn over your nachos.
  6. Add the entire nacho dish to the oven, baking for 6-10 minutes at 350 degrees, or until cheese melts or bubbles. It’s ok if the edges of the nachos get a little brown; it means it’s all melting together perfectly.
  7. Then pick your favorite toppings, usually added to the dish after you bake it or on a separate plate so your guests can choose what they want to top their chicken nachos with. We love shredded lettuce, hot salsa, chopped tomatoes or pico de gallo, sour cream, and guacamole. Jalapenos, black olives, and green onions are other popular additions to your chicken or beef nachos.
