Burrito Casserole Recipe

Ingredients:

  • 1 lb Good Ranchers Ground Beef
  • 1/2 Onion, Chopped
  • 2 Garlic Cloves, Chopped
  • 2 Tbsp. Olive Oil
  • 1 Cup Boiled Rice
  • 1 Can Black Beans, Rinsed and Drained
  • 1 Can Diced Fire Roasted Tomatoes
  • 1/2 Cup Chicken Broth or Water
  • 1 Pack Taco Seasoning, Low Sodium
  • 1/2 Cup Grated Cheddar Cheese
  • Chopped Cilantro (Optional)
  • Plain Greek Yogurt or Sour Cream (Optional)

 

Directions:

  1. In a large skillet over medium-high heat, soften the onion and garlic in the oil. Add the Good Ranchers Ground Beef, and cook until golden brown.
  2. Add the rice, beans, tomatoes, broth, and taco seasoning. Cover and cook over medium-low heat for 15 minutes, stirring occasionally, or until all the liquid has been absorbed.
  3. Sprinkle the cheese until melted.
  4. Sprinkle the burrito casserole with cilantro. Serve with tortilla chips and plain greek yogurt for extra protein and less fat (or sour cream), if desired.
*This recipe is best paired with a salad.
