
Burrito Casserole Recipe

Ingredients:
- 1 lb Good Ranchers Ground Beef
- 1/2 Onion, Chopped
- 2 Garlic Cloves, Chopped
- 2 Tbsp. Olive Oil
- 1 Cup Boiled Rice
- 1 Can Black Beans, Rinsed and Drained
- 1 Can Diced Fire Roasted Tomatoes
- 1/2 Cup Chicken Broth or Water
- 1 Pack Taco Seasoning, Low Sodium
- 1/2 Cup Grated Cheddar Cheese
- Chopped Cilantro (Optional)
- Plain Greek Yogurt or Sour Cream (Optional)
Directions:
- In a large skillet over medium-high heat, soften the onion and garlic in the oil. Add the Good Ranchers Ground Beef, and cook until golden brown.
- Add the rice, beans, tomatoes, broth, and taco seasoning. Cover and cook over medium-low heat for 15 minutes, stirring occasionally, or until all the liquid has been absorbed.
- Sprinkle the cheese until melted.
- Sprinkle the burrito casserole with cilantro. Serve with tortilla chips and plain greek yogurt for extra protein and less fat (or sour cream), if desired.
