Ingredients:

  • 2 Good Ranchers bone-in ribeyes
  • Olive oil
  • Sea salt or kosher salt
  • Freshly ground black pepper
  • Unsalted butter
  • Garlic cloves (optional)
  • Fresh herbs (e.g., thyme, rosemary) (optional)

Instructions:

 Preparation:

  • Begin by preparing your bone-in ribeyes. If you have time, remove them from the packaging and let them sit in the refrigerator, uncovered, for a few hours or overnight. This allows the surface of the steaks to dry out slightly, which promotes better caramelization when searing.

 Seasoning the Steaks:

  • Prior to cooking, take the ribeyes out of the refrigerator and let them come to room temperature for about 30 minutes.
  • Drizzle a small amount of olive oil over each steak, then use your hands to rub it evenly onto both sides.
  • Generously season each steak with sea salt or kosher salt and freshly ground black pepper. The ribeyes can handle a good amount of seasoning, so don't be shy!

Preheating the Cast Iron Pan:

  • Place a large cast iron skillet or pan over high heat. Allow the pan to preheat for a few minutes until it's smoking hot. This ensures a beautiful sear on the steaks.

 Searing the Steaks:

  • Once the cast iron pan is hot, carefully place the seasoned ribeyes in the pan. You should hear a sizzling sound as soon as the steaks make contact with the surface.
  • Let the steaks sear undisturbed for about 3-4 minutes on each side, or until a golden-brown crust forms. Avoid moving or flipping the steaks too often, as this can prevent proper caramelization.

 Adding Flavor (Optional):

  • If desired, add a few cloves of garlic and fresh herbs like thyme or rosemary to the pan during the last few minutes of cooking. Tilt the pan slightly and spoon the melted butter over the steaks to baste them.

 Resting the Steaks:

  • Once the ribeyes are seared to your desired level of doneness, remove them from the pan and transfer them to a plate or cutting board.
  • Allow the steaks to rest for about 5-10 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring a juicy and flavorful result.

  • After resting, slice the bone-in ribeyes against the grain and serve them hot. Pair them with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp salad.
