Hearty Roast Recipe: A Comfort Food Classic

Ingredients
• 2 lb Good Ranchers beef roast (chuck or shoulder)
• 2–3 tbsp olive oil
• 1 tsp garlic salt (adjust to taste)
• 1 tsp black pepper (adjust to taste)
• 2 tsp Cajun seasoning (adjust to taste)
• 1 onion, chopped
• 1 bell pepper, chopped
• 3–4 garlic cloves, minced
• 1/4 cup all-purpose flour
• 32 oz unsalted beef broth
• A few dashes Worcestershire sauce
• A few dashes hot sauce (optional, adjust to taste)
• Handful of baby carrots
• Handful of baby potatoes
Instructions:
1. Preheat the Oven
Set your oven to 350°F to get it ready for this slow-cooked masterpiece.
2. Season the Roast
Rub the beef roast generously with garlic salt, black pepper, and Cajun seasoning for a flavorful crust.
3. Brown the Roast
Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on both sides until golden brown, then remove and set aside.
4. Sauté the Vegetables
In the same pot, sauté the chopped onion, bell pepper, and minced garlic until softened and fragrant.
5. Make the Gravy
Sprinkle in the flour and stir until combined. Cook for 1–2 minutes, then gradually whisk in the beef broth. Add Worcestershire sauce, hot sauce (optional), and additional Cajun seasoning to taste.
6. Assemble the Dish
Place the browned roast back into the pot. Add baby carrots and potatoes, ensuring they’re coated in the gravy.
7. Slow Cook to Perfection
Cover the Dutch oven and bake for 3 hours, stirring halfway through. The roast should be fork-tender, and the vegetables cooked to perfection.
8. Adjust the Gravy
If needed, adjust the gravy’s consistency by adding more liquid. Taste and add more seasoning, if desired.
