Grilled Chicken and Berry Salad

Ingredients:

 

- 2  green lettuce, chopped (such as romaine or mixed greens)
- ½ cup strawberries, sliced
- ¼ cup blueberries
- ½  avocado, diced and sprinkled with sea salt
- 1 small cucumber, sliced
- ¼ cup pickled red onions
- 1/2 bag grilled chicken strips (see directions below)
- Blue cheese dressing (or dressing of your choice)

 

For the Grilled Chicken:

 

- I package strip cut chicken
- 1 tablespoon Kerrygold butter
- Salt and pepper, to taste


 

Instructions:

 

1. Prepare the Chicken:

- Heat a skillet over medium heat and melt the Kerrygold butter.
- Season the chicken strips with salt and pepper.
- Grill the chicken strips in the butter for about 2 minutes on each side, or until cooked through and golden. Remove from heat and set aside to cool slightly.

2. Assemble the Salad:

- In a large bowl or plate, layer the chopped dark green lettuce as the base.
- Top with sliced strawberries, blueberries, avocado (sprinkled with sea salt), sliced cucumber, and pickled onions.
- Arrange the grilled chicken strips on top.

3. Finish and Serve:

- Drizzle with blue cheese dressing or your favorite dressing.
- Toss gently if desired, or serve layered for a beautiful presentation.
