Herb Crusted Pork Chops

Ingredients:

2 Good Ranchers Pork Chops

4 tbsp Olive Oil

1 cup Panko Breadcrumbs

2 tbsp Fresh herbs, finely chopped

2 Garlic Cloves, minced

Zest of 1 Lemon

2 tbsp Parmesan Cheese, grated

2 tbsp Dijon Mustard

Green Beans

Bonus Sauce: 2 tablespoons butter and ½ cup heavy cream

 


Instructions:

 

1. Preheat the oven to 400 degrees and heat a cast iron skillet over medium high heat. 

 

2. Prepare the herb crust by combining the breadcrumbs, chopped herbs, garlic, lemon zest, and parmesan cheese in a dish.

 

3. Drizzle the crust with 2 tbsp olive oil and mix until slightly crumbly.

 

4. Pat the pork chops dry, season with salt and pepper, and brush with the Dijon mustard to help the crust stick. Press each chop firmly into the herb crust, coating both sides. 

 

5. Add 2 tbsp olive oil to the cast iron skillet and sear the chops until they are golden brown on each side.

 

6. Transfer the pork chops onto a baking sheet and finish cooking in the oven for 12-18 minutes or until their internal temperature reaches 145 degrees.

 

7. As they are cooking, prepare an easy side dish like green beans. Bring a pan with salted water to a boil and add trimmed green beans. Cook for 4-6 minutes or until they are fork-tender. Toss with melted butter, salt, and pepper and serve with the herb crusted pork chops.

 

8. To make the bonus sauce, melt 2 tablespoons butter on low in the cast iron skillet after you take the porch chops out. Add ½ cup heavy cream and whisk to pull up all the crispy bits from the bottom of the pan. Drizzle this creamy sauce over your pork chops after they have rested.  Enjoy!!
