Every new cut we add has to meet the same standard: it needs to be 100% American, high-quality, and something you’ll truly look forward to eating.

 

Our newest addition does exactly that. Introducing the Ranch Steak: our latest release, now replacing the Top Sirloin in the The Essentials Box.

 

The Ranch Steak is a lean, nutrient-dense cut from the same primal as the Flat Iron. It’s versatile enough for everyday meals, but also great on its own. As we continue to expand our offerings, the Ranch Steak represents exactly what we look for: quality, consistency, and the kind of value that makes a difference at dinnertime. Here’s what makes it stand out.

 

What Is a Ranch Steak?

Our Ranch Steak is a 6 oz cut sourced from the shoulder—part of the chuck primal, just like the Flat Iron. While the Flat Iron has gained popularity for its tenderness, the Ranch Steak often flies under the radar. But it shouldn’t.

This cut offers a rich flavor, a lean profile, and consistent performance across a variety of cooking methods. It’s boneless, uniform in shape, and easy to work with, which is ideal for both beginner home cooks and seasoned grillers alike.


Chef-Ready, Weeknight-Friendly

One of the things we love most about this cut? It’s incredibly easy to work with.

The Ranch Steak is trimmed and portioned to be consistent and forgiving. Its size and shape make it ideal for fast, even cooking, and it performs well in a range of preparations: grilled, seared, marinated, or cooked in cast iron. It’s a cut that fits into your weeknight schedule without sacrificing flavor.

We recommend cooking it to a red or pink center (medium rare to medium) to bring out its full potential. And like all our beef, it's USDA Choice and aged a minimum of 21 days for optimal tenderness and flavor.
