Pineapple Garlic Chicken Stir Fry

Ingredients:

    • Good Ranchers chicken breast strips
    • 1 cup pineapple juice
    • 1/4 cup soy sauce
    • 2 tablespoons brown sugar
    • 4 cloves garlic, minced
    • Salt and pepper, to taste
    • 1 tablespoon butter (optional)
    • Assorted vegetables for stir fry (e.g., bell peppers, red onions, or broccoli)

Instructions:

Prepare the Marinade:

  • In a mixing bowl, combine the pineapple juice, soy sauce, brown sugar, minced garlic, salt, and pepper. Stir well until the brown sugar is dissolved and all the ingredients are thoroughly mixed.

Marinate the Chicken:

  • Place the Good Ranchers chicken breast strips in a shallow dish or resealable plastic bags.
  • Pour the pineapple garlic marinade over the chicken, ensuring that all pieces are coated evenly.
  • Cover the dish or seal the bag, then refrigerate for at least 1 hour, allowing the flavors to infuse into the chicken.

 Prepare the Stir Fry:

  • Heat a large skillet or wok over medium-high heat. If desired, add a tablespoon of butter to the pan for extra flavor.
  • Once the skillet is hot, add the marinated chicken breast strips to the pan, discarding any excess marinade.
  • Cook the chicken for 4-5 minutes on each side, or until golden brown and cooked through. The marinade will caramelize, giving the chicken a deliciously sweet and savory flavor. 

Add Vegetables:

  • While the chicken is cooking, prepare your vegetables for the stir fry. Slice bell peppers, red onions, broccoli, or any other veggies of your choice into thin strips or bite-sized pieces.
  • Once the chicken is nearly cooked through, add the sliced vegetables to the skillet. Stir-fry them along with the chicken until they are tender-crisp and vibrant in color.

 Serve and Enjoy:

  • Once the chicken is fully cooked and the vegetables are tender, remove the skillet from the heat.
  • Serve the Pineapple Garlic Chicken Stir Fry hot, garnished with fresh herbs like cilantro or green onions, if desired.
