Smothered French Onion Chicken

Ingredients:

  • 4 Good Ranchers Chicken Breasts, Lightly Tenderized
  • 2) 1oz Pack of French Onion Soup Mix
  • 4 Tbsp. flour
  • 2 Tbsp. Olive Oil
  • 3 Slices Good Ranchers Bacon, Diced (Optional)
  • 1/2 Yellow Onion, Roughly Diced
  • 1 Cup Water
  • 1 Tbsp. Thyme, Fresh or Dried
  • 2 Tbsp. Sour Cream or Plain Greek Yogurt

Directions:

  1. Preheat oven to 375°F
  2. Add 1 packet soup mix and 2 tbsp. flour into a zip lock bag, add the tenderized chicken breasts and shake it to coat them.
  3. Heat some oil in a pan over medium heat, add the coated chicken and cook until browned all over but not cooked through. Turn them often, but carefully because it will take off the coating if you aren’t
  4. Remove the chicken out and put it in a greased casserole dish
  5. Add bacon (if you opt out of bacon, simply add1.5 tbsp olive oil) and onions to the pan. Stir constantly over medium heat.
  6. Once onions are soft, blend pack of french onion soup and 2 tbsp flour into a cup of water, and add it along with the thyme to the pan with the onions and bacon.
  7. Cook for a couple of minutes, then pour over the chicken in the casserole dish.
  8. Cover with foil, then bake for about 20 minutes, or until chicken is tender.
  9. Remove the chicken, and stir in sour cream/greek yogurt
  10. Replace chicken in the gravy, mix to coat, and enjoy!
  • This recipe is best paired with asparagus or green beans with goat cheese. For additional carbs, serve over rice or orzo.
