Steak Sandwich w/ Baked Sweet Potato Fries

Ingredients:

  • 3-5 Good Ranchers Top Sirloin Steaks (you can make this recipe with a little or a lot!)
  • 6-8 Slices of Deli Provolone Cheese (how cheesy do you like it?)
  • 1 large Yellow Onion (sliced thin)
  • 1 large Baguette
  • 1 tub Parmesan Garlic Butter
  • 3-5 Sweet Potatoes
  • Olive Oil
  • Onion Powder
  • Garlic Powder

Instructions:

  1. For the Baked Sweet Potato Fries:

    Preheat oven to 400°. Peel sweet potatoes and cut into thin strips. In a bowl, toss sweet potato strips with olive oil, salt, and pepper to coat. Measure these seasonings with your heart!

    Place on a parchment lined sheet pan and put in a 400° oven for 25-30 minutes.

  2. For the Steak Sandwich:

    Slice raw steak into fine strips (this is easier if the steak is still partially frozen). In a large bowl toss the steak with olive oil, salt, pepper, garlic, and onion powder.

    Cut the baguette lengthwise and spread garlic parmesan butter over the sliced bread. Place the bread on a parchment lined sheet pan and put in a 400° oven to warm for about 5 minutes. Remove if they start to brown.

    Preheat a cast iron skillet on high. Cook the steak slices in the cast iron skillet for 3-5 minutes per side. Take out the steak and set aside (leaving the juices in the pan). Turn the heat down to medium low and add the onion slices to the skillet and cook in the steak juices until onions are golden in color (this will take a few minutes).

    To assemble the sandwich, take the hot bread out of the oven and place the steak, onions, and provolone slices on the bottom side of the bread. Broil on high to melt the cheese. Toast the top bread slice (less than 5 minutes—just babysit it!). Put the top on the sandwich, slice into smaller sandwiches, and serve to your family with a side of baked sweet potato fries!
