Ingredients:
Steak Marinade:
  • 3 Tb Olive Oil
  • Juice from one Lemon and the Zest
  • 1/2 diced Onion
  • 1 Tbs Minced Garlic
  • 1 Tsp Cumin
  • 1 Tsp Paprika
  • 1 Tsp Coriander
  • 1 Tsp Allspice
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Oregano
  • 1/2 Tsp Sumac
  • 1 Tsp Salt and Pepper
  • 1 Tsp Baking Soda
  • 1 Tsp Corn Starch
Garlic sauce:
Simplified:
  • 8 Tb Mayo
  • - 2 Tb Minced Garlic
  • ⁃ Juice from half a Lemon juice
  • ⁃ 1 Tsp Dijon mustard
  • ⁃ 1/2 Tsp Salt

Elevated:

  • 1/2 cup Avocado Oil
  • 2 Egg Yolks
  • 2 Tbs Minced Garlic
  • Juice from half a Lemon
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Salt

Directions:
  1. Make the marinade for Shawarma.
  2. Cut your flat irons in half inch strips (against the grain).
  3. Place your meat in the marinade and let marinate.
  4. For the elevated garlic sauce, place ingredients in an immersion blender and blend up. Pro tip: add the oil slowly as you blend it to get the right consistency of the sauce.
  5. Place a pan on HIGH heat, and add some olive oil.
  6. Place meat in the pan and stir every 20-30 seconds till meat is cooked (2-3 minutes).
  7. Toast the pita bread.
  8. Combine sauce, meat, tomatoes, pickles, and top with more sauce. Voila!
